Homemade Cinnamon Buns



Hello everyone, so before I get started on today's recipe I want to let you know about a new project I have picked up.  Now some of you that follow my facebook page, https://www.facebook.com/Heatherzblueyez1975?ref=hl may already be aware of it.  I started a new blog, now do not worry I am not getting rid of this one or stopping my recipes.  If anything its just going to add to my recipes and give you a glimpse as to who I am as a person and maybe you can relate and get a few chuckles out of it.  If you do not feel this new blog is your thing, I get it and you have no obligation to follow and or like it.  Just know I am NOT stopping my recipes or videos.  They have been a bit slow getting out, because life with kids and a husband can be unpredictable at best.  Ok with all that being said let's get on with this recipe.  This was voted on by the people that follow my facebook page.  They are a great group of people some are food bloggers themselves others are friends, neighbors and family.  Then there are just the people that have been supporting me since I started making videos.  I invite you all to come over and share in the fun and the laughs.  I also share my latest recipes over there or pictures of things that will be later turned into a post or a video.  Wow that was a mouthful, lol.  I will be honest with you this is by far one of my longest recipes with the most steps but its worth it.


Ingredients for the dough:

1 1/4 cup of warm milk
2 1/4 teaspoon of yeast or 1 packet
4  1/4 cup of flour
1/4 cup of sugar
1 teaspoon of salt
1/4 cup of butter
1 Egg
Reserve 1/4 cup of flour just in case the batter is too wet, it will be sticky so be warned.

Ingredients for Cinnamon Center:

6 tablespoons of melted butter
1/4 cup of brown sugar
1/4 cup of white granulated sugar
1/4 cup of cinnamon ( I like a lot of cinnamon, if this is too much for you try 1/8 of a cup)


Ingredients for Frosted Glaze:

1 cup of powdered sugar
1/2 teaspoon of vanilla extract
1/2 teaspoon of almond extract ( if you don't like this no worries just don't add it)
1/8 of a cup of half and half
pinch of cinnamon


Instructions:

First let's warm up our milk, I warm mine up in the microwave for 45 seconds.  After that check the temp with candy thermometer it should read about 110 degrees. Add in your yeast to your milk.  Next in a stand mixer throw in all your wet ingredients omitting the yeast and milk mixture.  Mix on low until the wet ingredients are incorporated.  Now we are going mix the dry ingredients together in a separate bowl and with 1/2 cup amounts we are going to add the dry to the wet.  After the dry ingredients are incorporated we will then alternate the milk and yeast until both the dry and the milk and yeast mixture are all in the mixing bowl.  Mix on medium speed for about 3 minutes.  If you find that the dough is still a little wet, go ahead and add a little more of the reserved flour.  The dough should be sticky but hold on to the dough hook quite nicely.  Grease up a large mixing bowl and grease up your hands too while your at it.  Slide the dough into the mixing bowl and let rise until its double in size.  When the dough has risen, throw down some reserved flour if you have any onto a flat surface and grab either a large cup or rolling pin, powder the cup or rolling pin up with flour.  Roll out your dough to a large rectangle, once your dough is about 1/4 inch thick or a little thicker, mix up your cinnamon ingredients except the butter.  You will want to brush on all that butter on your dough, on top of the butter add the cinnamon sugar mixture and sprinkle it everywhere.  Leave a small boarder around the edge of the dough sugar and butter free.  Now here comes the fun part, roll that sucker up into a tight jelly roll formation.  Grab a cake pan, cookie sheet whatever you have and grease that sucker up.  Now with a sharp knife cut about 1 inch slices  where they  look like discs.  Place your cinnamon rolls or discs onto your baking pan, cookie sheet or cake pan whatever you just greased up, cut end up, cover and let rise again.  When the buns have puffed up, pre heat your oven to 350 and bake those bad boys for about 20 minutes or until golden brown on top and is bubbly.  As soon as they are out of the oven top with the frosted glaze and enjoy!  Its a lot of work but its so warm, yummy and delicious its worth all the work it took to make these.

Cherry Chocolate Chip Pancake Muffins




Hello everyone, so Valentine's Day is fast approaching.  As a food blogger I feel I wouldn't be doing any of my followers or anyone who happen to stumble upon my page any justice, if I did not come up with something for your sweethearts.  Now I came up with this recipe on my daughter's birthday, she's a February baby so she loves all things sweet, all things chocolate and all things Valentine's Day.  She asked for this for dinner, yes she is a child that much prefers dessert for dinner and dinner...... well left for her father lol.  At any rate I will share this recipe with you.  This has some surprising ingredients but if you have followed my blog and or videos and my facebook page long enough, this recipe should be no shock to any of you.  So here we go!

Ingredients:

2 cups of prepared pancake mix
1/2 cup of vanilla Greek yogurt
1 teaspoon of vanilla extract
1/4 cup of diced maraschino cherries
1 teaspoon of almond extract (you don't have to use this, I find that it brings out the flavor from the cherries)
2 tablespoons of cherry juice
1/4 cup of chocolate chips
2 eggs
cooking spray
a muffin tin I used a brownie pan from PC but you can use what you have

Instructions:

Preheat your oven to 350 degrees.  Spray your muffin tins and dont worry about lining them you wont need to, unless of course you just want to.  Grab a medium sized mixing bowl and combine all ingredients and mix.  You batter should look like this:  

Now you just spoon in your batter and bake for about 15-20 minutes.  When they are out of the oven serve them up.  I drizzled them with lite maple syrup and dusted the tops with cocoa powder. My kids loved them and my birthday girl was so happy, I was thanked with big syrupy kiss on my cheek and a sticky hug through my hair.  The mess was worth every single second.

Homemade Dirty Rice



Hello everyone, I hope you are all having a great day.  So how many of you have tried to figure out something for dinner while grocery shopping?  I will admit I do that more often than I want to say.  It does happen though even to the best of us.  As a last resort a lot of times I will just grab one of those boxes off the shelf and call it dinner.  Yes I know how to cook but there are days even for us food bloggers where the last thing we want to do is cook.  As much as I love cooking, I myself have days where the kitchen is the last place I want or need to be.  So it was over one of these "boxes" at the grocery store that I thought I bet I could make this myself.  And by golly that is what I did!  So here is my version of homemade dirty rice done the only way I know how to make it, the mishmawsh way. I would also like to mention that this is a one pot wonder meal, it is packed with flavor, its affordable and doesn't take that long to make.  

Ingredients:

3 cups of water
2 cups of beef broth, or two beef bullion cubes
1/2 teaspoon of cumin
1/2 teaspoon of Hungarian Paprika or reg. paprika if you dont have the Hungarian
pinch of crushed red pepper flake
1 pound of ground beef, chicken, turkey or pork
1 large diced onion
1 tablespoon of extra virgin olive oil
2 cups of minute rice  you can use brown or white
5 dashes of Tabasco sauce
2 dashes of Worcestershire sauce
salt and pepper to taste

Instructions:

Grab a large stock pot with a lit, next throw in your oil, and onions.  When the onions are soft throw in your ground beef.  I always buy extra lean ground beef so I do not have to drain the beef once its cooked.  After the beef is cooked throw in all the seasonings  and the last one to put in is the beef stock.  Do not add in the rice yet.  Let the beef, onions and seasonings come up to a boil and add in the rice.  Knock the heat down to simmer and cover with the lid.  Stir every 5 minutes or so just to make sure the rice doesnt stick to the bottom of your pot.  Simmer for about 20 minutes or just until the the rice has absorbed the liquid.  Now its time to plate it up and serve.  You can have a side salad with this, mixed veggies.  Anything goes great with this.  My husband loves having collard greens and corn bread with this.  Whatever floats your boat.
