Cheesy Tomato Mac



Good morning all, we woke up to a rainy Tuesday and so I thought maybe you all would enjoy this comforting dish.  This cheesy tomato mac really doesn't pack a lot of fat or calories its just downright good.  This hits all the notes that comfort food does but it is just missing the guilt.  We all have been there trying to be healthy, working out and drinking water but there are those days when the potato chip bag from your pantry is screaming at you to "come hither."  If your food doesn't talk to you like that well..... good for you, however there are some of us that are not that lucky.  At any rate let's get on with the recipe before I completely embarrass myself shall we?

Ingredients:

1/2 cup of any pasta you like I chose Rotini Prmavera (multicolored spirals) 
2 triangles of laughing cow spreadable cheese in white cheddar
1 teaspoon of extra virgin olive oil
1 large tomato diced
salt and pepper to taste

Instructions:

Cook the pasta according to directions just add some salt to your water before it boils, it will give your pasta a little extra flavor.  Next drain your pasta do not rinse it put it back on the stove and on low heat melt in the cheese and add the diced tomato.  Mix until combined and the cheese is melted.  Drizzle the extra virgin olive oil over the top and add salt and pepper to taste.  Its that easy and quick guys, you can adjust this recipe to feed more people if you like.  1/2 cup of pasta will feed 2 people easy with some for left overs.  You can add more spices if you like, I left them out because my kids like less spice and I made this for them.  Add a garden salad and your in business for a comforting and healthy meal the mishmawsh way.

Aint Your Grandma's Brussel Sprouts



Good morning all, here we are the first of May and I bring veggies to your table.  Well I have to tell you these are not your ordinary brussel sprouts.  Normally grandmas and mamas will just boil them when they have no color left and add some butter, salt and pepper or vinegar.  Kids everywhere were not liking them and brussel sprouts were known across the land as the classic food to feed to your dog or shove under your mashed potatoes.  The recipe I am about to share with you will not only re make a classic veggie but it will awaken your taste buds.  


Ingredients:

1-2 pounds of fresh Brussel sprouts ( you can use frozen just let them thaw first)
1 tablespoon of butter unsalted
4 tablespoons of balsamic vinegar or enough to coat all the Brussel sprouts
1-2 shakes of Tabasco sauce or you can use cayenne pepper
Salt and Pepper to taste

Instructions:

Pre heat your oven to 350 degrees, and grab a large sauce pan, fill it with water and bring to a boil on the top of your stove.  Start slicing your sprouts in half.  When your water comes up to a boil throw in the sprouts and let cook for about a minute or two.  Next grab a cookie sheet and place your sprouts on the pan.  Melt your butter in the microwave or on the stove and pour evenly over the top of sprouts.  Next add the balsamic vinegar, add just enough to coat them all.  Mix them up with the butter and vinegar and put them in the oven.  Roast them for about 20-25 minutes.  As soon as they come out of the oven hit them with some hot sauce, salt and pepper, give them a good stir and serve.
