Taco Pie


Hello everyone, so I ran a fun little contest on my facebook page.  I put up three pictures of recipes that I have made and asked people to vote on the one that they wanted to see as a recipe on my blog.  Well you are looking at the winner of that little contest.  However in the coming weeks the other contenders will show up as a recipe over here.  I will tell you that I changed a few things in this recipe and they worked like a charm.  The original recipe I found it here:  http://food-management.com/meat/idaho-potato-shell-taco-pie.  So lets get this started shall we? 

Ingredients:

1/4 cup of butter I used half of this 
2/3 cup of milk
2 taco seasonings packs I used low sodium
2 1/2 cups of instant potatoes I used four cheese 
1 pound of ground beef
1 chopped onion
1 tomato chopped
1 cup of shredded cheese
1/2 cup of sour cream
3 tablespoons of taco sauce
1/2 cup of water
1 cup of shredded lettuce

Instructions:

Before you begin, pre heat your oven to 350 degrees.  Grab a casserole pan or you can use a pie pan for this too.  I used a glass 8x8 casserole dish.  In a small sauce pan combine the butter and milk bring to a boil, take off the heat and add in potatoes.  Next Add in 1 packet of taco seasoning, mix until the seasoning is well mixed through the potatoes.  Next spray non stick cooking spray on your casserole dish or pie pan.  When the potatoes are cool enough to handle place them all in your casserole dish and push them down as if you were making a crust because that is what your doing.  When your potatoes are all pushed down and looks more like a crust than potatoes, put them in the oven for about 15 minutes or until crisp.  While the potatoes are crisping up in the oven, start browning your ground beef and onion together.  Drain if you need to and add the remaining taco seasoning  and water, when that is finished put aside.  Next grab a small mixing bowl and add sour cream and taco sauce.  Mix together with a fork and put aside.  Now bring your potatoes out of the oven and start putting all the meat mixture down on the crust.  Put your sour cream mixture over the top of the ground beef. Top it with shredded cheese and bake in the oven for about 20 minutes or until the cheese is melted and bubbly.  Next Add shredded lettuce and diced tomato on the top.  Let cool for about 5 minutes and serve.  My family loved this!  Our picky eater had 3 servings of this  and its very hard for her to eat any tacos when we have taco night!  I hope you all enjoy this as my family did.  Live, laugh and love !

Update!!!






Hi everyone, some of you probably know already that I started a youtube 
channel.  I have been wanting to do this for some time however I didnt know how to go about it.  I tried a few years ago to put up a random youtube video but it never went up because youtube said it was the wrong format.  So recently I dug a little deeper as to why I was having problems.  Come to find out it was something simple, go figure right? lol  So after I got it worked out I did a test video with a slideshow and narration right, I thought it would be pretty easy.  Ha Ha on me because I was wrong, arranging the pictures and creating the slideshow that is the easy part, the hard part came trying to get the narrative on there.  For over 4 hours I fought with the beast that is known as youtube.  With much frustration, paper throwing, and hair pulling, it worked and I got it on there.  Sure there were a few glitches that only Clark Griswold would go through.  For instance doing the narration, I had to have my husband try to help me because none of the audio that I was trying to use was working.  After about an hour we realized that the mic I was using was turned to mute.  Then after I created the video and put it up on youtube, I didnt realize until the next day that the volume on the mic wasnt high enough.  So for those of you who saw that first video I am sorry you had to blow your speakers just to hear what I was saying semi ok.  Man I know good ol Clark Griswold would be proud of the trials and tribulations we went through on that fateful night.

Bailey's French Toast



Good morning everyone!  I hope you are all having a blessed day.  So my oldest daughter is staying the night at a friend's house, and its just me, my hubby and our youngest daughter.  Now our youngest daughter is rather picky and through the years I have had to be pretty creative to make sure she gets nutritious foods in her body.  This is one of those recipes.  She isnt big on meats or any proteins really except cheese but that is only sometimes.  So I thought this up going by what she likes, she loves cinnamon, sugar,toast so I figured I would also slip in an egg and boom!  Bailey's french toast was born!  Its a simple recipe with very simple ingredients that I am sure most of you have kicking around in your fridge and pantry.  Let's get started.

Ingredients:

1 egg (1 egg per serving)
2 slices of bread ( two slices per serving)
1 tablespoon of butter or margarine
1/4 teaspoon of milk
1 tablespoon of sugar
1 tablespoon of cinnamon

Instructions:

Before you get started take half of a tablespoon of butter and melt it in a small skillet.  Next beat the egg and milk together, keep in a shallow bowl large enough to dip the bread in .  From there grab a small plate and mix the cinnamon and sugar together.  Now we should be ready to dip the bread in the egg mixture.  Slide the bread that has been dipped in the egg mixture in the hot pan and brown on both sides.  When the bread is golden brown on both sides, take out of the pan and put in the cinnamon and sugar, while still hot.  Dredge both sides of the french toast with the cinnamon and sugar and place on a plate.  Repeat all these steps until all your bread is golden brown and dipped in cinnamon and sugar.  My daughter likes her's cut in 4th s  so I did that, and serve.  I served this with a small fruit salad and a small glass of milk.  Breakfast is served and its kid approved!  I hope you try this and I hope your kids like it as much as my children.

Easy Pizza Dough



Good morning everyone, its a beautiful spring morning here in Maine today.  The sun is shining, the birds are singing, my cat is going nuts because she wants at the birds and we have snow in the forecast... wait ... uh... what?  Yes you guessed it even when its Spring time in Maine that doesnt mean it cant or wont snow.  A few years back we got blasted with a blizzard on Patriots Day.  Ok so let's talk food since I know that is why some of you check out this blog, you want some recipes dammit.  Ok this one is from a very good friend of mine.  She is a fellow food blogger and subscriber to my yt channel.  She's an amazing person and has an even better sense of humor.  She is probably the most genuine person you could ever have the pleasure of knowing.  A few months back her and I decided to swap recipes where she would cook and blog one of my recipes and I would cook, video and blog one of hers.  This pizza dough recipe of hers is the best dough I have ever worked with.  Its soft but so easy to work with, I have worked with pizza doughs in the past for a job and the doughs there were so stiff it was hard to work with them.  This dough isnt like that and so I thought I will give you all the recipe.  Now I added a couple of little things to this that doesnt change the texture at all but just gives it a little flavor boost.  You can find this recipe and  a lot more of delicious recipes over at www.foodthoughtsofachefwannabe.com ok let's get started.


Ingredients:

3 to 3 1/2 cups of reg. flour
A pinch of salt or up to 2 teaspoons
2 teaspoons of sugar
1 1/2 tablespoons of Extra virgin olive oil
1 1/4 cups of water at 110 degrees ( it makes the yeast happy)
1 packet or 2 1/4 teaspoons of yeast
1 tablespoon of Italian seasoning
1-2 tablespoons of garlic powder

Instructions:

Before I begin anything I turn on my hot water and let it run then I measure out the water.  I used a meat thermometer to keep an eye on the temp of the water and when the water hits 110 degrees add your yeast to it and put it aside for 4 minutes.  Now I used a stand mixer for this but if you dont have one use a bowl and a spoon and kneed with your hands.  If you choose to use a stand mixer for this you want to grab some extra virgin olive oil (not the oil you measured out for this recipe you will need it) and drizzled some on a paper towel and I wiped my kneeding hook, and mixing bowl with it.  Then I grabbed a large bowl and did the same thing.  Believe me this will be helpful later.  Next I throw in all the ingredients except the yeast and water yet.  Mix on a low setting until just combined.  Now add in your water and yeast and let that go for about 10 minutes or so.  If you find that your dough was a little dry like mine was add a little warm water.  If its too wet add a little flour.  When your dough is wrapped around your dough hook and all the flour and other ingredients are pretty much cleaned off the bowl you know your dough is ready.  Take your dough out of the mixing bowl and transfer it to that large bowl I told you to oil up.  Drizzle the top of the dough with a little extra virgin olive oil and loosely cover with some plastic wrap.  Put aside in a warm spot until the dough doubles in size.  This takes about an hour.  After the dough has doubled in size cut it in half and you are ready to either start making your pizzas, calzones, or Stromboli right now or you can wrap it up and store it in your fridge or freezer.  If you store it in your fridge I wouldnt let sit there anymore than 2 days tops.  I hope you all like this recipe like my family did and thank you Chris for your fantastic recipe your a true gem.

Salsbury Steaks and Gravy



Good morning everyone!  I hope you are all having a wonderful start to your spring morning.  I made this recipe a few weeks back and it was a huge hit with my family and I figured I would share this with you all.  This is such a budget friendly recipe and it has caused me to wonder why should you buy these from the freezer section again?  So here we go onto the recipe.  


Ingredients:

1 Pound of ground beef or you can use turkey or chicken too
1 Egg
3 Large onions
1 Tablespoon of beef base or 2 beef bullion cubes or beef stock or broth
1 Tablespoon of onion powder
1 Tablespoon of garlic powder
1 Tablespoon of thyme
1 Tablespoon of rosemary
1 Pinch of cayanne pepper
1/4 cup of untoasted unseasoned breadcrumbs
1 Tablespoon of extra virgin olive oil
1/2 pound of mushrooms (optional)
1/2 Tablespoon of flour

Instructions:

Before you get started grab one of your large onions and a half of a tablespoon of extra virgin olive oil.  Dice up your onion, while your dicing your onion, heat up some of that oil in a frying pan.  After your pan and oil is warmed up add in the diced onion.  Once the onion is soft, put aside.  While that onion is cooling its time to work on the meat.  In a large bowl add in your meat, egg, seasonings, breadcrumbs and that onion you just softened.  Mix up the meat mixture with your hands until all the seasonings are combined and the egg is mixed through. Put the meat aside and lets start working on the gravy to this.  Add in the rest of the extra virgin olive oil and the rest of the onions diced up or cut how you like it.  Add in the mushrooms diced and leave them alone.  Let the mushrooms soak up the juices from the onion and let the onions become brown in color.  Once the onions are caramelized, add in the flour and beef base.  Do not add any water to this yet you want the flour to cook out and the beef base to incorporate in your onions and mushrooms.  If you use beef broth, dont add it until the flour is incorporated with the onions and mushrooms and its all incorporated.  Once everyone is happy and has come together add about a half cup to a cup of water.  You are looking for a gravy that will coat the back of the spoon.  Now remember all those seasonings I told you to use, go ahead and add some of those to this gravy, it wont be too much in fact it will layer the flavors keeping everything tasting yummy.  Grab a large casserole dish and pre heat your oven to 350.  Ladle some of that gravy you just made in the bottom of the casserole dish and start forming your steaks.  You want to shape them in the form of footballs or oval shaped and you want them about 1 1/2 to 2 inches thick.  Once your steaks are formed add them to the casserole dish and top them with all the gravy.  Bake for about an hour depending on your oven.  I know it seems pretty involved but I promise you it will take me longer to type all this out than it will for you make this recipe.  You can serve with mashed potatoes, sweet potatoes whatever you wish.  Here is how I served them up and they were huge hit with my family.  I will never buy them from the freezer section again that's for sure.
