Banana Oat Muffins

Hello everyone, last Friday I made my kids these muffins and they loved them. I found the recipe to these at all recipes and I changed it up a bit than the recipe they originally posted, simply because I do not have flax seed on hand or whole wheat flour.  If you have those items on hand you can sub out the white Ap flour and add the flax seeds to your bananas.  So here is my version and I hope you enjoy them however you make them.  Keep in mind these are not made with butter or oil because of the fresh bananas and milk it would be too soupy if you added oil or butter too.  Ok onto the recipe!


1/2 cup of quick cooking oats
1/2 cup of milk
1 teaspoon vanilla
1 Egg
1/4 cup of brown sugar
1/4 cup of white sugar
2 1/2 teaspoons of baking powder
2 mashed bananas
pinch of salt to bring out the sweetness of the muffin
1 1/2 cups of all purpose flour or whatever you have on hand


Pre heat your oven to 350.  Grab two mixing bowls one is for your wet ingredients and sugar and the other bowl is for your dry ingredients.  In one bowl add in vanilla, egg, sugars,milk, and bananas (mashed).  Mix those ingredients together, you can use a hand mixer or you can mix this by hand the choice is yours.  Next add oats, flour, baking powder, salt and cinnamon.  With a fork mix all the dry  ingredients together just until they are all combined.  Now slowly add in the dry to the wet ingredients, this prevents the batter clumping. Once the wet and dry ingredients come together add the rest of the dry ingredients.  Mix it all up and add to either muffin cups or directly to your muffin tin.  Bake in the oven for about 12-15 minutes and let cool for about 5 minutes.  The muffins are a lot easier to work with when left cool.  I hope you all have a wonderful day and Live, laugh and love.

Healthy Beef Stroganoff

Hello everyone, so it seems that most people are looking for lower calorie foods and who can blame them.  We are headed into spring and everyone is ready for it happen.  With chill to your bone temperatures we have been having in New England I think everyone, even the most die hard winter fan can all agree let us bring on some Spring.  With all of that being said I have a recipe for you that is warm, comforting and isnt loaded with fat and calories and its a spin on an old family favorite.  Beef Stroganoff here we come!


1 pound of the leanest steak you can find that is on sale either that or slice off  some lean roast beef
1 large onion I used a red onion but just use what you have
3 tablespoons of minced garlic
1 tablespoon of flour of your choice
1 teaspoon old bay seasoning
1 teaspoon of cracked black pepper
1 teaspoon of garlic powder
2 cups of water
3 tablespoons of Worcestershire sauce
1/2 pound of angel hair whole wheat spaghetti or you can use traditional egg noodles whole wheat of course
2 Beef bullion cubes


In a large skillet drizzle about a teaspoon of extra virgin olive oil.  Next add in your onion and let it get soft then add the garlic (we dont want the garlic to burn).  While the onion and garlic are cooking, grab a small mixing bowl and add in your cut up meat, flour and seasonings.  Mix them together until all the meat is coated in flour and seasonings.  Next add your meat to the pan, brown the meat and add 1 cup of water and bullion cubes to deglaze the pan.  I used a wire whisk to help me get all the bits off the bottom of the pan.  When this thickens again, add the other cup of water. Next add in the Worcestershire sauce. Reduce the heat ( I had mine on medium and turned it down to medium low) and let simmer for about 20 minutes.  Add more water if the sauce thickens. When your pasta is done so is your sauce.  Traditionally this recipe is made with heavy creams, sour cream and such by using the water you dont need those creams, if you coat your meat with flour first.  Everyone in my family enjoyed this on a bitter cold New England evening.  I hope you all give this a try its packed full of flavor.  You could have a side salad to go along with this or some green beans, however you try it I hope you all live, laugh and love.

BBQ Pulled Turkey Sandwich

Hello everyone, so the super bowl is right around the corner.  Now I am not much of a football fan but I did marry a football fan.  So that makes me the bonified cook for the day, in all honesty I am the cook every day.  I do however like to make some foods for my husband that he doesnt normally get through the year.  Normally we eat pretty healthy as a family however this one day a year I dont skimp on fat and calories.  However this recipe is a very light version to a favorite of many.  This is my spin on a pulled pork sandwich using turkey tenderloin as the main attraction.  Down below is a turkey tenderloin and there were two in a package for a very good price I might add.

1 turkey tenderloin
1 large onion
4 oz of your favorite bbq sauce I used sweet baby ray's
4 toasted bulkie rolls or hamburger rolls 
1 crock pot


Cut up your onion and put aside.  Place your turkey tenderloin in your slow cooker and add the bbq sauce.  Put your onion over the top of the tenderloin and here you can add more spices if you like.  My family likes just the flavor of the bbq sauce and onion.  Cook on low for about 6 hours or high for 4 hours.  When the turkey tenderloin is finished cooking, keep it in the ceramic bowl and take two forks and break it all apart, you can go ahead and add more bbq sauce to make it more saucy.  Put your pulled turkey mixture on a roll and you can top it with coleslaw or leave it alone.  This is healthier alternative to the fattier version any day and its so full of flavor you wont miss the high fat and calories.  Take care everyone and Live, laugh and love.

Whoopie Pies

Hello everyone, today I am going to give you all my recipe on how to make whoopie pies.  Now in my neck of the woods here in Maine we believe we are the originators of this dessert, however there are other places in argument over that.  I wont get into that here however if you are curious google can be your friend.  So a neighbor of mine wanted this recipe and I could have sworn that I put it up on this blog so she could just go to it.  Well long story short it wasnt here like I had thought.  However after today it will be.  So you can basically fill these little jems with whatever type of filling or frosting you prefer.  I have done peanut butter frosting, vanilla frosting, and even a marshmallow cream frosting which in my opinion was the best.  Ok so let's carry on shall we?


3/4 cup butter
1 1/2 cup sugar
2 eggs
1/2 teaspoon of vanilla
1 1/2 cup of milk
3 cups of flour
3/4 cups of cocoa
3/4 teaspoon of baking powder
2 1/4 teaspoon of baking soda
a pinch of salt


In a large mixing bowl cream together butter, sugar, eggs, vanilla and add the milk slowly while creaming the ingredients.  You are looking for a light fluffy texture.  Next slowly add in all your dry ingredients the flour, baking soda, baking powder, cocoa, and salt. Keep mixing until all ingredients are incorporated.  On a greased cookie sheet or you can line it with parchment paper or a sill pad, go ahead and just like cookies drop the batter down by the spoonfuls.  You can make these as big or as small as you like.  In a preheated oven to 350 degrees place your filled up cookie sheet in the oven for about 15 minutes or just until the whoopie pie is springy that means when you lightly touch the center it should spring back.  Or use the toothpick method of checking for done ness.  If these instructions are confusing for you not to worry I did a video on these a while ago and you can watch the video and see me make them.  Have fun cooking you all and Live, laugh and love.
