Twice Baked Potato Casserole

Hello everyone, so its been a very long since you all have seen a post from me.  I am sorry about that but due to some personal things that needed my attention I had to put this and my videos off for a bit.  Now as some of you already know I had to have surgery.  Yesterday I went in for my surgery but it turned out to be one of those things that as soon as they opened me up they realized they had to do the surgery a different way.  So what that means is I will be having another surgery soon.  Anyway while I was coming to I heard nurses talking about about a Thanksgiving pot luck they are going to have at the hospital I was at.  One of the nurses wanted to do something different with potatoes and I told her about my twice baked potato casserole.  Under all the medicine I was under I think I called it baked potato casserole.  Either way you say tomato and I say tomato type of thing.  So you can thank the nurses at Inland Hospital for this recipe and post today.  By the way Inland is a great hospital and the nurses and staff there are awesome.  Ok so here is the recipe.  Keep in mind though when I made this I didnt make it low fat but it can be done.


Russet potatoes depending on how many people are feeding count on one potato per person.
If you are feeding four people you will need 6 slices of bacon cooked
2 cups of shredded cheese more if you like extra cheese
1 egg
1 tablespoon of ground mustard
1 tablespoon of onion and garlic powder
1 cup of sour cream
1 half stick of unsalted butter
2 green onions chopped
salt and pepper to taste


First off bake off the potatoes as you would if you were making baked potatoes.  Let them cool just enough so you can work with them.  Cut them into chunks and mash them.  Melt the butter and warm up the sour cream together and then add in the egg to the butter and sour cream mixture, and put aside.  Next add in all your spices to the potatoes then add in your butter and sour cream mixture.  Once those ingredients are all incorporated add in half of the cheese and half of the bacon.  ( you will want to chop up the bacon into small pieces).  Mix the cheese and the bacon all through the potatoes.  Put potatoes into a casserole dish and top the potatoes off with the other half of the cheese,green onions and bacon.  Bake in a 350 degree oven for about 45 minutes to an hour.  Let cool for about 10 minutes and serve, you can serve this with any kind of meat or take it to a pot luck.  You can put some green onions over the top when it comes out of the oven as well.  

Healthy Substitutions:

Instead of reg bacon use either bacon bits or turkey bacon
Instead of real butter you can use margarine or a fat free version
Instead of regular cheese go with the low fat to fat free options there
Instead of sour cream you could just use skim milk or fat free sour cream or even fat free cream cheese just make sure the cream cheese is melted because it will be easier to incorporate.
I don't know how this would be with anything different than a potato I would think that cauliflower would be too watery and you would loose the effect but experiment and tell me how you liked it.  
Also you can sub out the real egg for an egg substitute or just use egg whites.

I don't have a video for this yet but when my surgery is finally completed be on the look out for it.
