Pumpkin Chocolate Chip Cookies

Hi everyone, so yesterday I did a video on how I make pumpkin chocolate chip cookies.  Most people have their own way of making these and I thought I would share with you on how I make them with you.  I filmed this with my girls and after much editing (fyi when your kids are involved there is a lot of editing going on lol.) we finally have the video up.  Anyway I am not here to talk to you all about how I make you tube videos I guess that is for another post.  Pumpkin chocolate chip cookies are a delicious treat to have in the fall or any time of the year really.  With all the spices its usually this time of year that most people want to smell those warm spices coming from their kitchens.  I am so surprised I haven't shared this recipe with you all before since I make them all the time.  Well here is the recipe now and I hope you all enjoy it as much as my family does.


1  15 oz can of pumpkin whatever brand you like, you can even make your own pumpkin if you prefer.
2  cups of any sugar I used brown sugar but you can use white sugar too or even a sugar substitute
1 cup of oil or applesauce (if using applesauce bake the cookies for about 10-15 minutes)
2 tsp of baking soda
2 tsp of milk
4 cups of any flour of your choosing even wheat flour would work
4 tsp of baking powder
2 tsp of vanilla
2 tsp of cinnamon
1 tsp of ground nutmeg
2 tsp of ground ginger
1-2 cups of chocolate chips
1 Egg Beaten


Pre heat your oven to 375 and lightly spray your cookie sheets with cooking spray.  Next mix all your wet ingredients including your sugar in a large mixing bowl.  From here in a smaller mixing bowl mix in your dry ingredients and your spices.  You can either sift them or just use a fork until the flour, baking soda and powder and spices are well incorporated.    
Add in your chocolate chips to your wet ingredients, mix well.  Now we are ready to slowly mix the dry ingredients with the wet ingredients.  What you need to do is add about  1 cup of the flour mixture to the wet ingredients, mix until its combined well, and then keep adding a cup of the dry and mixing it into the wet until all the dry ingredients are mixed into the batter.  The batter will be very thick.  If you use applesauce in replace of the oil it wont be as thick, that is ok it just needs to cook a little bit longer in the oven.  Now we are ready to put them on cookie sheets and bake them.  Spray about 2 cookie sheets lightly with cooking spray and grab two teaspoons.  Spoon the batter on one spoon and slide it off the spoon with the other one.  I know it sounds confusing that is why I am including the video for this recipe lol.  Its actually a lot easier than it sounds lol.  So you want to bake them for about 8-10 minutes depending on your oven.  It took mine the whole 10 minutes but I have made them before on a different oven and it only took 8 minutes.  Just check them.  After 8-10 minutes they are done and just let them cool and they are ready to serve.  This recipe made about 3 plus dozen cookies, I made them rather large too.  Enjoy and live, laugh and love !
