Funky Open Faced Quesadilla











Hello everyone, I know its been a long time since my last blog.  We have been so busy with the kids this summer along with my you tube videos and visiting family over the 4th of July. I have a recipe today that is not on my you tube channel yet and I thought for the people who only follow this blog this is a special treat for you all.  I made this for my kid's lunch this afternoon and they loved it and I hope you do too!


Ingredients:


1 large tortilla  or two if you are feeding 4 people
1 large handful of spring mix
1 teaspoon of salsa of your choice
2 slices of turkey breast I used low sodium
1 handful of low fat cheese
1 basil leave cut with kitchen sheers
4 diced cherry tomatoes


Instructions:


Preheat your oven to 350 degrees and grab a cookie sheet sprayed with cooking spray.  Put your tortilla on your cookie sheet flat and with a teaspoon spread the salsa over the top of it.  Next add your spring mix over the top of the tortilla and then add turkey, cherry tomatoes  and cheese.  Lastly take one basil leave and with kitchen sheers just cut small pieces all over the top and bake for about 10 minutes or just until the cheese is melted.  Cut with a pizza cutter in half and one half is one serving.  
You can sub out whatever you like peach salsa would be wonderful with this and you can top it with a little sour cream if you like too.  Take care everyone Live, laugh and love.
