My Favorite Texas Tweeties Live in San Angelo Texas

Hello everyone, I hope you are all having a wonderful day and that the sun is shining where ever in the world you are.  Today is a departure from my recipes.  Yes I know I have a habit of departing from my normal day to day so often that its not so much of a departure for you.  Over this past weekend we received a beautiful gift from a friend of mine and my husband's.  His name is Bob Zeller and he and his wife Ann are a very talented two some.  Bob is a photographer and he makes calenders among other things.  He goes to the local state park and takes nature photos, namely photos of birds. In the above video we have their work for you all to see and let me tell ya this video does them no justice just wait until you have this in your hands.  The calenders that Bob makes are great quality and the pictures are so clear its like you looking at it as though its happening.  I mentioned Bob's wife Ann, she hand knits afghans, lap robes, baby afghans and knitted dish towels among many other things.  She ships and sells her products all around the country, if you are interested in either Bob or Ann's products I will provide you all with that information.  I hope you give them a try because it will be well worth your money. BBQ Meatloaf

Hi everyone so above are my youtube videos for this recipe so you can see me cooking it live.  I am going to give you the recipe for this and soon all my other recipes on this blog will have videos to go along with the recipes.  I think it just makes it a little bit more personal.  Anyway this blog has not had much attention paid to it lately by me because I have been busy making the videos and taking care of mommy and wife stuff.  I am not however closing this blog down.  I will get organized to where I can do my videos one day and my blog the next day.
So this is my husband's favorite meatloaf I have made.  Keep in mind I make a ton of different recipes for meatloaf.  I know almost a year ago I put up a remake of a traditional meatloaf and I have a ton more that I have not even put up yet. With all of that being said here is the recipe for the recipe for the bbq meatloaf.


Half of a large onion
1 diced carrot
1 diced celery stalk
1 diced bell pepper or use a handful of frozen peppers
2 lbs of extra lean ground beef
1 teaspoon of coconut oil or 1 tablespoon of evoo (extra virgin olive oil)
1 loosely beaten egg
1 teaspoon of steak seasoning, I used Chicago steak seasoning
1 teaspoon of granulated garlic or garlic powder
1 minced fresh garlic
1 1/2 teaspoons of Worcestershire sauce
1 teaspoon of ketchup
1 tablespoon of bbq sauce
Reserve out about 3 tablespoons of bbq sauce to put over the meatloaf before it goes into the oven
1 cup of seasoned bread crumbs (look for that video on youtube and look for it on here soon)


Preheat your oven to 350 degrees, then you want to go ahead and saute your diced veggies in some coconut oil or extra virgin olive oil.  The last minute of them on the heat add in the minced garlic.  Let them cool enough so they can be handled.  In a large mixing bowl add your ground beef and cooled veggies.  Then add your seasonings, granulated garlic or garlic powder, steak seasoning and bread crumbs.  Next add all your wet ingredients,  ketchup, Worcestershire sauce, bbq sauce (make sure you reserve the 3 tablespoons in a separate bowl) and egg.  Mix with your hands just until the veggies and the egg is well incorporated through the meat.  Shape the meat into a loaf on a cookie sheet and cover the top with your reserved bbq sauce.  Bake for 1 hour and 10 minutes.  Serve with a salad and mashed potatoes or sweet potatoes and enjoy.  I hope you enjoy this as much as my family does.  Take care all live, laugh and love.
