Kinda Homemade Veggie Pizza
Hi everyone, I am back with a new recipe. Before I get into the recipe though I hope you all had a wonderful Easter or if you do not celebrate Easter I hope you all had a great weekend. Either way we are back to our normal lives now. Issy was on vacation all last week so my blog posts were few and far between, however here we go. So back to the recipe, I made this last Friday, my husband is Catholic so he doesn't eat meat on Fridays leading up to Easter. I thought this would be something we all could enjoy and its better for you than the traditional dial up and order pizza. I did however take some help from the grocery store and bought frozen wheat bread, not the frozen pizza crust unless you like a thin crust. I personally cant stand a cracker type of crust on my pizza. If I wanted a cracker pizza I would just put some sauce and cheese on a cracker. At any rate with a wink and a nudge here is my version of a homemade pizza. I used a pizza stone that my aunt gave me years ago but you can use cookie sheets its ok. Here is the recipe enjoy!
1 frozen whole wheat bread dough
1/2 onion diced
1/2 cups of mushrooms (if you do not like mushrooms leave them out)
1/2 cup of diced bell pepper
1/2 cup of cherry tomatoes sliced
1/2 cup of marinara sauce or jarred spaghetti sauce
1/2 cup of low fat cheese I used a blend of cheddar and mozzarella
1 tablespoon of Extra Virgin olive oil
1 teaspoon of Italian seasoning
1 teaspoon of Spanish rosemary
The morning of pizza night, grab a medium sized mixing bowl and spray it with cooking spray, put your frozen dough in the bowl and cover it for about 6-8 hours. It depends on how hot your kitchen is. My kitchen is pretty chilly so I just put this in the microwave for about 8 hours. Once the dough is risen, punch it down and grab your pizza stone or cookie sheet. Drizzle half of your extra virgin olive oil on the pan. Stretch out your dough to fit your stone or cookie sheet. Drizzle the rest of the evoo on the dough, spread it evenly and add your seasonings. Then add your sauce, cheese and toppings. Bake at 350 for about 25 minutes. Slice it up and you have your own veggie pizza, serve it up with some salad and your dinner is ready. Before you add your oil or seasonings, poke the dough with a fork all over the dough. This allows the air to escape so you wont have many air bubbles when the pizza is ready.
