Anti Mayo Macaroni Salad



Hi everyone, I know its been awhile since I put up my last blog and I tried to not let too much time lapse in between blogs.  I just needed a little break to get some recipes together and pictures together along with some new ideas, especially since Easter is this weekend.  This recipe in particular would be a good side dish with your ham this weekend or anytime for that matter.  Its great for a pot luck as well, its very fast to make and healthier for you than the traditional macaroni salad.  As always you can change out as many ingredients as you wish, this one is just how my family likes it.


Ingredients:

1 1/2 cups of uncooked macaroni, feel free to add whole wheat I would have used that because I love whole wheat pastas however I would have been the only one to eat it since I am the only one that likes it.
2 stalks of celery diced
1-2 diced carrots
1 red bell pepper or use whatever color you like
10 cherry tomatoes quartered
1 orange bell pepper diced
1/4 to 1/2 cup of lowfat or fat free Italian dressing
A palm sized amount of lowfat or fat free shredded cheese we use the lowfat because I cannot convince my family on the fat free stuff lol 


Instructions:

To start off you want to cook the pasta first and then drain it in cold water.  Next in a large mixing bowl add your cold pasta and all your veggies, mix it up and then add the cheese and Italian dressing. Cover it and let it set in your fridge for about an hour or two.  I made this go to with pulled pork bbqed sandwiches and it was a fabulous side with it.  I hope you like this as much as my family did.  Live, laugh and love everyone.
