Hi everyone sorry this recipe is coming up late, we had a few errands to run this morning in this weather. This recipe is of my tuna melt muffin, now this sounds like a lot of ingredients but rest assured once you get this going its not that bad. I dont know the numbers on this but its not as bad as your typical tuna melt in the fat and calories, but it does have all the flavor.
1 small can of white albacore tuna (water packed)
1 diced green onion
splash of lemon juice
1 sweet pickle diced
1 dill pickle diced
1 teaspoon of mayo (add more if this is too dry for you )
1-2 whole grain english muffins toasted
salt and pepper to taste
1/4 cup of shredded cheese of your choice
Toast your english muffins in the toaster and preheat your broiler to 350. You can use your broiler too however I always burn stuff when I use it lol. Put all your diced veggies in a medium sized bowl. Mix up the remaining ingredients except the cheese and tomatoes. Next put your tuna on top of the english muffins and top with the sliced tomatoes and sprinkle the cheese over the top. If you dont use all the cheese its ok you can put it back and use it another time or make some tomato soup and sprinkle the cheese over the soup. This makes a great snack or a lunch with a side or two. Check out my blog tomorrow when I will be attempting to make my gumbo. Its not going to be traditional because I cannot stand okra and I am not impressed with shell fish.
