Hello everyone, I hope you all had a great weekend. Sorry I am getting a late start this morning with my blog, I had a hard time sleeping last night so my husband let me sleep in this morning. So over the weekend I made myself some chicken salad and had it on a bed of lettuce with some crackers. Now I will share my recipe with you all, it turned out so good my 4 year old ate hers on a sandwich and she ate the whole thing! I hope you all enjoy this.
1 can of chicken breast or you can use left over boneless skinless chicken breast
1 stalk of celery diced
1/4 cup of grapes diced
1/4 apple diced
1 teaspoon of mayo
1 teaspoon of light ranch dressing add more if its too dry
Salt and pepper
dash of paprika
A squirt of lemon juice
After you diced up all your veggies and fruit add them to a medium sized mixing bowl. Add the chicken and lemon juice and mix. Add the salt and pepper then the mayo and ranch. Mix until combined. Add more mayo or ranch if its too dry for you. Top it with some paprika for color and you have chicken salad to put on sandwiches, or on a bed of lettuce like I did or you can even use it on crackers.
