White Chocolate chip Brownie Cookies

Hi everyone, so I know that this recipe is not really breakfast food but who says it cannot be a little treat to have in the morning? I thought if your hubby, wife, friend whoever makes these for you and puts a couple on a tray with some tea, coffee, or juice it would be lovely. I came up with the idea of these cookies because I am terrible about making brownies. Either the boxed version or made from a recipe I am always burning the outside and the inside is goopy. However I can make cookies and hence the idea for these. I made them last night and they are so yummy, I am very impressed with myself. I thought I would share this recipe with you today and share a picture I took of them too. So let's get these bad boys started !


1/2 cup of butter
1/2 cup packed brown sugar
1 cup of flour
1 1/2 cup of granulated sugar
1/4 cup of cocoa
1 cup of chocolate chips
1/2 teaspoon of salt (optional)
3 eggs
1/2 teaspoon of vanilla extract
1/2 cup to 1 cup of white chocolate chips
1/2 teaspoon of baking powder
1/2 teaspoon of baking soda


Preheat oven to 350 degrees. Melt butter, chocolate chips and brown sugar in a saucepan on low heat. Put all your dry ingredients in a big mixing bowl and mix with a fork. When the butter, chocolate and sugar are melted together add to the dry ingredients. Mix together until just combined and add in eggs and vanilla. Mix until everything is incorporated and add in the white chocolate chips. When the white chocolate chips are mixed in, grab two teaspoons and put spoon out the batter onto a non stick cookie sheet or a cookie sheet with non stick cooking spray. Bake for 8 minutes and let cool on the cookie sheet for about 5 minutes then transfer to a cooling rack. This recipe makes a little bit more than 24 cookies, depending on how big you make the cookies. This would be a great recipe to make with your kids, its fun, they are quick and easy and messy.
