Ingredients:
1 pound of red potatoes, I know this sounds like a lot for two people, the reason leftovers for another meal or maybe a special breakfast.
The other half of the herb packet from the chicken cutlets
Extra virgin olive oil
Salt and Pepper
Aluminum foil
Instructions:
Preheat your oven to 350 degrees. Cut the potatoes in half and arrange on the foil, make sure the foil is rolled out big enough to hold the potatoes. From there we drizzle the potatoes with extra virgin olive oil, herbs and salt and pepper. Fold up the edges of the foil around the potatoes to form an envelope almost. You want the potatoes completely covered and put your foil pouch on the cookie sheet and bake. Every 15 minutes during the cooking time you want shake the potatoes to make sure they cook evenly. After about 45 minutes they should be ready. Dont worry about over cooking because unless you are boiling them you cannot over bake a potato as long as the skin doesn't burn. If the skin does burn just peel the skin off the potato should be fine.
