Herb Chicken with Cherry Tomatoes

Hello everyone, so today keeping with our theme of simple meals for two and or romantic dinners. I thought I would tell you about this herb chicken that I make. I usually make this to be rubbed on a roasting chicken but you can use this on any other cut of meat as well. As a footnote here I usually save myself some time and buy the poultry herbs at the grocery store. Its an assortment of various herbs, rosemary, thyme, dill and oregano. This is what this recipe calls for, however if your grocery store doesn't carry this bundle you can use herbs you have on hand or buy them individually. So lets get started its a very simple meal with simple ingredients and extraordinary flavor.


2 boneless skinless chicken cutlets
Half of your poultry pack ( you will see why you dont use the whole thing in another blog)
Salt and pepper to taste
1 cup of Cherry tomatoes


Wash your chicken and pat it dry with a paper towel. Next add your salt and pepper and herbs rub on both sides of the cutlets. In a skillet heat it up when the skillet is very hot drizzle extra virgin olive oil and add the chicken immediately. Cook until the chicken is no longer pink. From here while the skillet is still hot add your cherry tomatoes and reduce the heat. Keep the tomatoes in there until they are soft. Pour the tomatoes over the top of the chicken and your done. Your main course is finished and it took minutes to make. Look all through this week for sides to go with this chicken.
