Blast from the past Pasta Fagioli

Hi everybody this recipe I put up back in December but since its been so cold outside I thought I would re post it.  This recipe comes with a review from my husband at the end of it.  I hope you get a chance to try it and I hope you enjoy it as my family did.  Live, laugh, love everyone.

Pasta Fagioli

Hello everyone, today I am making a recipe that I have been making for a few years now and I am just now putting it on my blog. It must have been a blond moment as to why its taken me this long to put up this recipe that I make during the winter months. Its not expensive to make and its a one pot meal. Within 20 minutes or the time it takes to cook pasta you have a healthy meal for your family. I hope you all enjoy this as my family does every winter. So lets get started!


1 Pound of ground beef or turkey
1 Onion chopped
1 Bell pepper (color is your choice)
1 Stalk of Celery chopped
1 Carrot diced
2 cloves of garlic minced
Pinch of italian seasoning
Pinch of basil
Pinch of oregano
Pinch of salt and pepper
1 large can of crushed tomatoes or you can make your own which is what I use sometimes
1 smaller can of diced tomatoes
1 can or dry of red beans, if you use dry make sure you precook them before you make this
1 can of white beans
1 can of black beans (if you use canned beans make sure they are all drained)
4 cups of beef broth or chicken broth
2 cups of water
1/2 cup of any small pasta, I use elbow macaroni but I have used wheels and mini bowties too

Grab a large pot of any kind just big enough to make soup in, drizzle a little of evoo and cook your meat and veggies together, just until the meat isnt pink and the veggies are soft. Next start adding all your other ingredients except the pasta. Bring everything to a boil and add the pasta cook for about 20 minutes or just until the pasta is ready. Serve with a side salad and a crusty piece of bread or toasted pita and you have a meal that is healthy, warm and hearty.

To me, the true measure of any dish is whether the kids like it or not, especially the younger ones like our 3 year old, Bailey. Heather is an exceptional cook and I like 99%of what she makes. Issy the 8 year old does, too. I approach any new thing Heather creates with an open mind (and taste buds) but a critical eye, as it were. When she made this dish, I had never had it before, so my critical "eye" was opened wide. long story short, this dish was excellent. To me, it was real close to a stew-type dish which I like better than a soup. I like the 'stick to your ribs" feel of a stew, so this stuff was right up my alley. And Issy's alley. And, believe it or not, Bailey the Finicky Eater 3 year year old liked it too! She even told her mommy that she liked it. When Bailey likes something enough to actually speak her approval, it's dang good! And this was dang good. i look forward to the time when Heather cranks up the kitchen and Pasta Fagioli is for us to magia. Arrivaderci !
