Veggie Chicken Salad again

Hello everyone the weekend is finally here! In the spirit of getting back into the swing of things weather it be diet, exercise or both eating healthy sometimes takes a very boring turn on Iamsosickofveggies road. I hope today this recipe that I made up will help waken your taste buds and hopefully offer some ideas for you to change it up to your own preferences. This is a two for one deal meaning two recipes in one blog. Enjoy!

Ingredients for the Salad:

1 Romaine heart
1 bunch of swiss chard or fresh spinach or any other green
2 stalks of celery
2 carrots
1 red bell pepper
1 green pepper
1 medium red onion
8 oz of fresh mushrooms
2 cucumbers
1 tomato
1 avocado
8 oz of grilled chicken breast or left over chicken breast is fine, make sure bone is off and skin is off too

Instructions for salad:

In a food processor or using your knife shred the lettuce, and spinach. Put in a large bowl and then shred your celery, carrots, onions, peppers and mushrooms. From here slice your chicken into either slices or dices whatever you prefer. Put veggies and chicken on top of the greens and then slice your tomatoes avocado and cucumbers and arrange them on top of the salad in any pattern you prefer.
Now onto the salad dressing

You will need:

1 tablespoon of rosemary,thyme, basil and dill
1 orange
1 lime
1 lemon
1 tablespoon of extra virgin olive oil
1 hot pepper
2 cloves of garlic

Instructions for the salad dressing:

In your food processor or blender add your rosemary, basil, thyme and dill and blend. From there you want to juice the orange, lemon and lime. Add to your blender or food processor and then add your garlic and hot pepper blend until smooth. The last thing you add is the evoo just until its all mixed together well. Serve this salad dressing over the top of your salad or have it on the side.

The salad and the dressing makes a great side or you can have it as your main dish. Its a great pick me up and full of flavor you will never know you are eating well in the process.
