Smooth Red Salsa









Hello everyone, so keeping with the super bowl theme of the week I have a smooth salsa for you. However if you do like your salsa chunky by all means leave the onions, cilantro and garlic out and mix them in when everything else is done. You can serve this with tortilla chips or even use it with some veggies for a low fat veggie dip. Either way you use it its surely to be a hit. I hope you enjoy it as much as my family does.

Ingredients:

1 can of fire roasted diced tomatoes
1/2 of a lime juiced
3 tablespoons of cilantro chopped
1/2 cup of chopped red onion
2 cloves of garlic lightly sauteed
1 fire roasted red pepper you can use the sweet for less heat or the hot for more heat
1/2 of a jalapeño diced
dash of cumin
pinch of salt

Instructions:

In a blender add your tomatoes, roasted red pepper, lime juice, onion, cilantro, jalapeño and spices. Blend until smooth. Then in a separate pan take two whole garlic cloves and lightly sautee in a small amount of extra virgin olive oil. Take the garlic out when the garlic starts to lightly brown. Add your sauteed garlic to the blender and blend it with everything else. Once the garlic is incorporated your done. Put it in a small bowl and serve. If you do not have a blender you can either use a potato masher or you can cut it all up with your knife. Either way its sure to be a hit. Have a great day everyone and live, laugh and love.
