Potato Soup that is Super bowl Worthy!

Hi everyone, I hope this day finds you all well. If you live in the north east as we do try to stay warm this week because its going to get colder. The recipe I have for you today will surely warm you up and it can be served for all the upcoming super bowl parties too. This is a departure from the healthy recipes I have been putting up. Everything in moderation and if you have a small cup of this on occasion, it shouldn't spoil your whole day or week. Well lets get started!


1 large onion diced
2 carrots diced
2 garlic cloves
2 stalks of celery diced
1/2 stick of butter
2 cups of cheese
2 cups of heavy cream, half and half or milk
6 cups of chicken broth
6 small potatoes or 3 large ones diced
1 teaspoon of basil


In a large stock pot add the butter and sautee all your veggies except your potatoes you want to add them right before you are ready to add your chicken stock. After your veggies are soft but have no browning to them add your tators and chicken stock or broth which ever you prefer. Cook for about 20 minutes or just until your tators are cooked. Next we are going to make a roux and some people make the roux right in the soup itself, that method never works for me because it tastes too much like paste. I grab a small pot I add 4 tablespoons of butter and 4 tablespoons of flour and cook them together until the flour looks less white and more of a butter color. Next I add the cream or half and half and whisk until the lumps are gone and add your cheese. For cheeses you can add any kind you like any shredded cheddar would do. I used Velveeta it gives it a creamy texture and its what most restaurants use. After the cheese has melted in the roux turn off the heat to the soup and add the roux slowly until its well blended. Stir in your basil and you are ready to serve it and enjoy.

I served this with some Italian bread for my family and even my picky three year old loved it. I was surprised it turned out so well because normally I am not a big fan of potato soups I thought they tasted too bland and pasty. This recipe blew my mind it was so flavorful and creamy without being pasty. You can find this recipe on you tube just search food wishes and scroll through the videos until you find this one.

Be on the look out because this week I am doing all super bowl themed snacks and party ideas and I am dedicating them to my husband since he is the only one in this house that gets excited about such events. I do enjoy the cooking part for it though I have to admit, however that day after the cooking part turns into a lifetime movie marathon for me lol. UPDATED:  I recently made this soup on my channel, and here are the changes I made to this very versatile recipe.  I added bell peppers, ham, and fresh baby spinach. Below is the video and a few pictures we took that day.  I served this homemade garlic bread.  Enjoy!
