Hello everyone, so today I have a recipe that I came up with. It goes along with all of those rice bowl meal ideas but I know what is going into them. I dont really know for sure the numbers on this but if I remember from calorie counter.com its not that much. I just put in every individual ingredient to calorie counter and it gets all the nutritional info for me. The recipe itself I never thought these ingredients would work together but they did and it was actually very enjoyable to eat and it made me feel satisfied. I should also mention that all the ingredients are for a single serving however you can adjust this for your whole family too.
1/4 cup of cooked couscous
1/2 cup of cooked broccoli
1/2 of a teaspoon of extra virgin olive oil
2 strips of grilled chicken breast or left over chicken breast two strips though
1/2 teaspoon of any bean you prefer I used black eyed peas but any black or white bean will do even red beans will work too
1/2 teaspoon of balsamic vinegar
Mrs dash tomato and basil seasoning
One half diced fresh tomato
Add your precooked couscous, chicken, broccoli and beans together. Mix them up and then add your evoo for flavor and your balsamic vinegar and pepper and mrs. dash. Mix it together again and then top it off with some fresh tomatoes. Put in your microwave for about a minute to a minute and a half depending on your microwave. You are only putting it in there to heat it through because everything else is already cooked.
I hope you enjoy this as I did. This was just something I threw together and these ingredients had all the elements that I was low on for that day like protein and a few other vitamins I cannot remember lol.
