Half time Frito Pie Casserole

Hi everyone I hope this day finds you well. So I have a handful of recipe ideas for your super bowl party or just having snacks for the game. Today's recipe is inspired by one of my husband's favorite snacks and I have not seen it much around here unless someone makes it. I had frito pie in Oklahoma when I was 19 with my aunt. At the time it was like 2 bucks and very very yummy. The traditional frito pie is a snack sized bag of frito corn chips (still in the bag no bowl required) with a spoonful of chili and cheese over the top. My husband used to go to a lot of football games and growing up in Texas who doesn't do that? So here is my version but a little bit more fancy, a whole lot easy to make and just as easy on the wallet as well. I decided to make it in casserole form simply because its enough to feed a crowd and they can serve themselves.


1 can of refried beans
1 large bag of frito corn chips
16 oz of canned chili or 2 cups of your own chili
8-12oz of shredded cheese depending on how much cheese you like
1-2 green onions chopped green and the white parts
4 teaspoons of sour cream


Preheat your oven to 350 degrees. Grab a large baking dish like a Pyrex or some sort of glass baking dish. Spray the dish with non stick cooking spray. Layer on the whole can of refried beans. Then a layer of cheese, next comes a layer of fritos. On top of the fritos add the chili and top it off with the remaining cheese. Bake for about 15-18 minutes, just until the cheese is melted and its heated through. Take out of the oven and sprinkle the green onions on the top and dollop the top with the sour cream. You can be fancy here by making four little dollops of sour cream on the top.

I hope you enjoy this recipe as it holds many memories for my husband and for myself. This is s sure fire crowd pleaser and half time with this recipe will not be the same in your house.
