Crock Pot Swedish Meatballs

Hi everyone, so continuing on the theme of the super bowl I thought some of you may like this recipe that I make for my husband just about every single super bowl. I am not a fan of it because its too rich for me but I know there are a lot of people liking this recipe and some think its a timely process to make. Well here is my recipe for Swedish meatballs. Sure everyone has their own way of doing it and that is fine, this is just the way I make mine.


1 pound of extra lean ground beef, chicken or turkey
1 tablespoon of extra virgin olive oil
1 very large white onion, or two small onions
1 can of cream of mushroom soup
1/2 to 1 pound of diced mushrooms if you do not like mushrooms leave them out
1 teaspoon of Worcestershire sauce
1/2 to 1/4 cup of milk depends on how thick you like yours
1 tablespoon of sour cream
1/2 cup of Parmesan cheese any kind except for the stuff in the green can that wont work too well with this recipe
1 tablespoon of Italian seasoning
1 egg
about 1 cup of bread crumbs


Ok before I continue, if you are planning on using pre made meatballs or frozen ones you will want to skip to when I make the gravy for the meatballs. This part is instructions on how to make the meatballs you can keep this part for future recipes. Ok so to make my meatballs I put the meat, Italian seasoning, the egg and the bread crumbs together and mix them just until they are combined. You dont want to over mix because that causes for greasy hands and dry meatballs. preheat your oven to 350 degrees and line a large cookie sheet with tin foil. Now start forming your meatballs you can make them any size you want to, just as long as they are about the same size. When you are finished sprinkle a little bit of the cheese over the top and bake for about 10-20 minutes depending on the size of the meatballs.
Now onto the gravy, you will need a very large skillet. Over medium heat, add evoo and sliced onions and diced mushrooms. You will need to cook this until the onions get caramelized and the mushrooms cook down. Then add your cream of mushroom soup, milk, Worcestershire sauce and some Italian seasoning. Bring to a simmer and put your sour cream in a small bowl and add some of the gravy to and mix it until smooth. You do that so the sour cream doesn't clump in the gravy. When the sour cream is smooth add it to your skillet slowly and stir until smooth. Put the remaining cheese into the gravy and turn off the heat. Grab your meatballs from the oven or the freezer and throw them in your crock pot then add the gravy. Stir until the meatballs are coated and cook on low for about an hour until it thickens. My husband likes to make mini Swedish meatballs sandwiches out of these with some Hawaiian king rolls. You can use any dinner roll you have on hand. You also could serve this over egg noodles and have a side salad for a warm and hearty dinner. I know this recipe has a lot to it but you will see if you try this recipe out its really not as bad as it seems. I hope you try this recipe and I hope you enjoy it the way my husband does.
