Gingerbread Cake






Hello everyone, I hope this day finds you and your family well. Today I am going to give you all my gingerbread cake recipe. I made this for my daughter's class a couple of weeks ago and it was a huge hit. So huge in fact her teacher told me I could make it any time I wanted to because she said " it was so delicious." So here is the recipe and I hope you all enjoy it.

Ingredients:

1 stick of butter softened unsalted
1 cup of sugar
2 eggs
3/4 cups of boiling water
3/4 cups of dark molasses
2 1/2 cups of flour
2 teaspoons of baking soda
1/2 teaspoon of salt
2 teaspoons of powdered ginger


Instructions:

Preheat your oven to 350 degrees. Next grease a cake pan be very liberal with this. Combine all your dry ingredients mixing together with a fork. In a separate bowl, cream butter and sugar together. From there add one egg at a time and mix together until it looks like frosting. Put your beaters away and grab a mixing spoon because you are going to add your water, molasses and your dry ingredients. Mix until all the dry ingredients are incorporated. The batter should have the consistency of cake batter. Add the batter into your greased cake pan and bake for about 35-45 minutes. Let cool completely and you can either frost it, serve it warm with some cool whip or just sprinkle it with some powdered sugar.

Leftover Makeover For Turkey


Hello everyone, So as promised I have a new recipe for you all and be sure to check one of my husbands blogs to see the review for this recipe. Just copy and paste this: www.becausetobysaidso.blogspot.com and you will be able to read his review of this recipe. Ok so lets get started shall we?

Ingredients:

2 cups of diced cooked turkey
1/3 cup of butter or extra virgin olive oil
1/3 cup of flour
1 can of chicken broth or chicken bullion
1 large onion
2 cloves of minced garlic
2 diced stalks of celery
2 diced carrots or about a cup of diced carrots already cooked
1 teaspoon of curry
pinch of salt and pepper to taste
1 80z can of diced pineapple or use fresh if you have it

Instructions:

In a large skillet add your butter or oil and after warm add your onion, garlic, celery and carrots. We dont want to brown the veggies we want them to get soft and release their sweet flavor. From there we add our flour and whisk until all the flour is combined with the veggies and then add your chicken broth or stock. Whisk until smooth and then add your seasonings, pineapple and turkey. Keep on the burner until hot, serve it over rice and you have a revamped meal with leftover turkey that in no way tastes like Thanksgiving.

Quick Tip:

When cooking rice to add more flavor without adding a lot of salt use a tablespoon of a mild hot sauce. Just add it to the water before you add the rice, it gives it a hint of flavor and there is no need to add salt.

IM BACK!!!

Hello everyone, I am back. I know its odd for me to have a post up on a Sunday but I am going to try a new format and have a new blog post up 7 days a week until Christmas. So I am sure some of you might want to know what I have been up to these past few weeks. There have been a few family things that required my attention so my blog went on the back burner until I could focus my attention on the blog. Nothing major just a few family things that everyone goes through, the whole getting a game plan for the holidays. Testing and finding new recipes, making goodies for my daughter's second grade class, helping with the homework, trying to teach the three year old how to write her name you know the usual everyday stuff.
So what can you expect from me in the coming weeks, well you can expect some holiday recipes, I am not going to update anyone until the middle of January about my lifestyle change so be looking for that sometime in January. Also be looking at my husband's blog as I post the recipes since he is going to post a review on his blog. Yeah confusing I know but I will post a link to his blog that the review will be on and I will have the recipe to go with it on my blog. It will be sort of one stop shopping and getting into the holiday spirit who wouldn't love that right?
We had a wonderful Thanksgiving with just the four of us. We were hoping to head to spend Thanksgiving with my mother and stepfather and my father and stepmother but things didnt go as we hoped. That is ok though because it looks like we may be able to do it for Christmas. I am very thankful for my friends and family and of course my children, and all of you that read my blogs. I think we should all be thankful for everything even when its not Thanksgiving too.
I want to thank you all for your time in reading my blogs and yes they are back so be looking for a new blog post tomorrow. It will be a recipe I am not sure what one because a few new ones to work with . I guess I will surprise you with one. I hope you all had a wonderful and joyous Thanksgiving. I know the holiday season can be stressful and sometimes personalities clash but please remember the things you say in the heat of the moment cannot be taken back if something unfortunate happens and God calls that person home. Make sure you let your friends and family know every second of the day no matter how you feel at the time that you love them. A little bit of this and a little bit of that

Hello everyone, today's blog is a bit different from anything I have written on this blog before. Here we are in November the month of thanks and appreciating all that is different in one another and celebrating those differences. I want to add that I am thankful every single day for my family, friends and for my faith. I understand that some do not believe and that is ok I am not here to change your mind but just open myself up and explain where I feel more connected and loved. When I was younger I would go to Sunday school, church and participated in youth groups. I would pray every day for those I cared about and for those I did not and those I had yet to know. I still pray every day but I have been very lackadaisical about heading out to church. I feel that through the signs I have seen and unexplainable things that could only come from God himself I feel the lord is calling more and more of us to his house of worship. I feel this is something I want to do where for me it makes all the pieces relevant for my life.
Changing the tides here a little bit I have a small update for you all in my lifestyle change. I have to date lost a total of 28 pounds. I had a doctor's appointment that confirmed my lifestyle is working for me. My blood pressure with the help of medication is at a normal level and my medication doesn't need to be changed ever since I was diagnosed with high blood pressure. I have to go for some blood work sometime within the next 6 months before my next appointment.
With Thanksgiving around the corner I have so many feelings so many fond memories of thanksgivings past and so much excitement for those to come. Its not so much the food as it is the company in which you share your food with. Even though some things have changed on my father's side of the family, I still consider everyone a part of my family as if it were 8 or more years ago. I miss them very much and I wish nothing but good fortune and love for them all. They know who they are if they are reading this. Thanksgiving shouldn't be just reserved for November but all year long. I hope this silly little blog has found you all at a good place and I hope and wish wonderful things for you all. V8 Soup Review

Hi everyone, sorry I havent been blogging too much lately. You all know how it is when you have little ones and Halloween and birthdays and all the other goings on from the day to day. So I am trying to get back on track to my blog.
This morning my husband and I had a few errands to run and we had to run to the store to pick up a few things. I noticed a display of the V8 soups put out by campbell's soup. I picked up the golden squash and the garden vegetable. For breakfast I tried out the squash one, its very good. However do not expect a squash flavor to it otherwise you will be disappointed. I really liked it because even though I like squash it has too sweet of a flavor to it. The texture is very much like squash and so is the color. The soup is very vegetably tasting and very thick. Overall I really liked it but I can understand why some wouldn't like it. It needs a little spice like salt and pepper or garlic powder, something like that. Overall I give it probably 4 out of 5 stars simply because I liked the simplicity of it and how you can actually taste the vegetables instead of getting a pile of salty flavor in your mouth.
The box itself is difficult to open and very messy, you have to unfold the sides then cut a werid triangle on the arrows they give you to cut on and pinch the sides and watch out you better have a bowl or a pot ready because the stuff goes all over the place. It would be nice if it was packaged a little differently.
The store I bought this from had it on sale 2 for 5 dollars so its not terrible in price either. So my advice to you if you are someone who is not a fan of high salt soups, and not a fan of vegetable flavored soups you may not like this soup. The whole box is 140 calories and something like 430 mgs in sodium and its advertised as having 4 servings of veggies in it.
