Honey Mustard Roasted Red Potatoes


Hi everyone, I hope you all had a wonderful weekend. My weekend was crazy busy and Monday and possibly Tuesday will be just as busy however is should slow down the middle of the week. Anyway, I made a very fallish yummy meal tonight and I would like share one of the things I made with you today. Honey Mustard roasted red potatoes, yeah I know its a mouthful but its super easy to make and soooo tasty.

Ingredients:

1.
1-2 pounds of cleaned red potatoes with skin on.
2. 3-4 pats of butter
3. One large clove of garlic or two small cloves of garlic
4. 1-2 teaspoons of oregano
5. Salt and pepper to taste
6. 1-1 and half teaspoons of honey
7. 1 teaspoon of Dijon mustard, the grainy kind not the smooth kind


Instructions:

Cut your potatoes in bite sized quarters, depending on the size of the potato cut about 6 times.
Put your potatoes in a large bowl.
Melt your butter in the microwave.
While the butter is still warm add your honey.
after the honey has dissolved add the mustard and oregano and salt and pepper to taste
finely dice your garlic you dont want any really big chunks because you want your potatoes coated.
add your garlic to the butter and honey mixture blend well
drizzle over your red potatoes
Mix the honey mustard mixture and the potatoes well and put in a casserole dish, I used a glass pyrex dish.
Bake on 350 for about an hour you can serve this alone or with a whole meal. I had this with roast beef and honey glazed
carrots. My family really enjoyed this tonight, they are already asking me to make these again.
