Bacon Cheeseburger Casserole

Hello everyone, I hope you all have had a safe and wonderful holiday weekend. Today I thought I would kick us off with a comfort recipe for those days when all rules should be broken. We are making bacon cheeseburger casserole and here is how you do it.


1 pound of ground beef, we use the 95 or more percent lean.
1 clove of garlic
1 large onion
Half a block of Velveeta
two cups of shredded cheese we use a blend of cheddar and colby
6 slices of bacon
12 ounce package of french fries
9x9 casserole dish
1 Green pepper
1 Red pepper
1 pound of mushrooms


Dice finely all your veggies. Heat a skillet with extra virgin olive oil and add your meat and diced veggies. When the meat is brown drain and mix in your cheeses over low heat. While waiting for the cheeses to melt pre cook your bacon and spray cooking spray on your casserole dish and add your french fries. When the cheeses are melted add your meat and cheese mixture over the top. Crumble up your pre cooked bacon slices and sprinkle over the top. Bake on 350 for about 20-40 minutes, just until the french fries are cooked and the cheeses created a crust. Serve with a tossed salad or some crusty bread.
