Update on the Healthy lifestyle

Hi everyone, thank you for taking the time to check out my blog posts. I am very appreciative for you all. So as you all know I am trying a different way to look at calories in my food and a new healthy lifestyle for myself.
I know its only been a few days since starting down this journey but I have discovered a few things already like first of all I think I made a mistake. The reason why I think I made a mistake is because I should have eaten like I normally did through out the day then recorded it and then added up the calories I ate and then subtracted 500 from the total amount of calories eaten. That number should have been the starting point for this new lifestyle.
Another thing I have noticed is there just isn't enough time in the day to consume what I thought would be a healthy starting point of 2000 calories a day. I figured that is the thingy on the labels on most food products that says based on a 2000 calorie day diet or something like that. So that would be a good starting point for me to go by.
Last night I was hungry and I was able to still have a snack before bedtime and I still didn't even make it to my 2000 calories all day long.
Here is the part that is very confusing to me and if anyone has any suggestions about anything I am talking about please feel free to suggest away. I am finding I have been eating way less calories than I am now. I am not hungry in the morning and I have to force myself to eat something even its wheat toast and hummus for breakfast. I honestly do not get hungry until after 2 in the afternoon and even though I am replacing big meals with 5 little meals it seems as though those afternoon healthy snacks are not keeping my stomach from growling. So for a snack today I had a can of ginger ale 140 calories and some chex mix and I didn't measure or even look at the calorie content, I know right I cheated. Because I have no clue how many calories I ate, I am thinking tonight, Thursday night I will just have a bowl of cereal with berries and skim milk.
I have been clocking in around 1900 calories or less a day. I am getting a lot of activity between chasing after my 3 year old who thinks the upstairs bathroom is an amusement park to going up and down the stairs 25 times a day. I know right everything is a mess right now and I know that it will probably take a while for my body to adjust to this new way of life for me. Maybe I need to tweak my food and exercise a little bit more and then re tweak it as I go.

Summer Chicken cordon blu

Hello everyone , thank you all for stopping by today. Lately its been so warm and everyone is out enjoying the weather swimming, fishing or just visiting family. Whatever the case may be I have a quick and easy recipe for one of those days where the last thing you want to do is slave over a stove. To start you will need 4-6 boneless skinless chicken breasts, a quarter cup of balsamic vinegar and one to one and half teaspoon of brown sugar. Mix the vinegar and brown sugar together in a bowl until the sugar dissolves, then take a zip lock storage bag or large bowl to fit the chicken and marinade into. Store in your fridge for about an hour or two. Its best to store over night if you can. Now when the chicken is through marinating, you can either grill it or use a grill pan that goes on your stove. Cook it until its done but leave it on your grill, next you will add on top of your chicken a piece of ham that is cut to fit the chicken and a slice of mozzarella sliced cheese. Cover your grill or your grill pan just until the cheese is melted. Take off your grill or grill pan and now you can either make sandwiches with it or dice it up and put it over a salad. My family and I like it just as it is with a few sides of veggies, maybe some rice or a nice salad. Serve it with a icy cold glass of iced tea and enjoy.

Hello everyone, thank you for stopping by today and checking out my blog. I will just get right into what my secret is. So over the weekend we had a family function to attend, one of my aunt's was there taking pictures. When I looked at my picture I couldn't believe it was me. I didn't look healthy at all and even though I am pretty big person I never felt unhealthy so I have never seen me look that way before. I then checked out a few websites and I found this one from the Mayo Clinic. I found out that everything that I have done and was doing was the ruination of my health, not just the obvious but also the idea that I had to lose weight. Before when I would go on a diet I would reduce my calorie intake to like 500 calories a day. Well no wonder that wasn't working if the average person eats about 1500-1800 calories a day. Someone who is even larger eats more calories and their bodies are used to that high volume of calories so the Mayo clinic recommends you eat 500 less calories than what you ate before. So if you eat 2000 calories a day reduce them to 1500. No wonder all the muscle I had when I was younger is gone. Because even in high school when I had 30 pounds to lose I would reduce my calories in such a harsh way that my body was starving and yes I lost weight but I lost too much of the good stuff. Now by body looks like its been in a war with 7 cities. So this is what I have been doing I figured out how many calories I eat and reduced it by 500 and I eat 5 small meals a day. I am finding I can eat pretty much anything as long as its within my calories. This is only my second day doing this so from time to time I will keep you all updated.
Now on to something that is very near and dear to my heart. I am sure you all know about all the charities out there. Just yesterday I noticed someone on youtube who is a comedian doing this. Everyone has Haiti or Katrina funds for people to donate to. These are great things to help those people in those devastated areas. I have always asked myself though, is this money really going to someone who really needs it or is it going through 10 hands who don't need it before it gets to the hands to the people who do need it? I just cannot take peoples word for it. However there is a way that you me and others can directly help out the ones that need it. We all live in places where there are some that are doing well and those that aren't. We live in a time where people don't even know their neighbors where we just assume that because they appear to have a nice house then there are no problems. Well we all know what assuming things means. It makes an ass out of you and me. A week ago I introduced myself to some new neighbors who had a little girl. I never would have known if I didn't talk to them that before moving here they were homeless. I never would have known if I didn't talk to them that they needed a few things too. I will not share their names on here because that isn't what this is about. I talked this all over with my husband and we both came to the decision instead of giving to these charities where we have no clue if the money being sent is directly helping someone or not. We decided to go to Walmart and buy this young couple lets call them Ed and Sandra, some things they can use in their kitchen, like cups, plates, silverware, measuring cups and spoons, ect. We put it in a gift bag for them and handed it to them. Later in that evening Ed and Sandra came over and thanked us like crazy because they didnt have any of that stuff. My point here is this I am not tooting my own horn with this story, I am using this as an example that we all can do these things around our own neighborhoods. I am not originally from Augusta, where I grew up people do this all the time its a common way of life there so some readers of this blog from there will probably read this and think so what that is what we do, and where I grew up has the mentality of "it takes a village" where if someone is in need of help the neighborhood and surrounding communities come together. Since I moved from my hometown I have realized not everyone is like that and a lot of places no one even knows their neighbors. So I have a challenge for all my readers, go outside take a walk through your neighborhoods and have conversations with people, find out if there is someone in your neighborhood, maybe there is an elderly lady on your street who cant go to the grocery store because she is too lame. Maybe there is a young couple with a baby and they are out of formula or maybe they just need someone to talk to that isnt a baby. Whatever the case may be. The point is do something for someone who is in need in your own communities. That is my challenge for all of you, what you do doesn't have to cost a thing, just do it. Anyone can write a check and put it the mail box or call a number and donate money from your debit card, but doing the actual footwork yourself in your own neighborhoods. After all I was raised to believe that charity begins at home.

Veggie Curry Skillet

Hello everyone, sorry this blog is coming up late. I have a new thing going on in my life right now that I will blog about at another time. At any rate its time for some veggie curry skillet. Its not bad for you because of all the veggies thats in it, however it could be more healthy if it was a veggie curry bake which can be done by the way. You start off by grabbing the biggest skillet you have, and grabbing these veggies, potatoes, onions, garlic, carrots, summer squash,celery,green and red peppers and finally some salt and pepper and curry powder. Dice all your veggies to whatever size you prefer and what ever amount of veggies that will feed you family. Just as an example, I used 6 small potatoes for a family of four and 3 carrots , two stalks of celery, a whole medium sized onion, a whole green and red pepper and a whole summer squash large sized. Before you add any veggies or any oils turn your pan up you want that sucker to be hot. After your veggies are diced go ahead and add in your extra virgin olive oil and a sliver of butter. After that melts add in all your veggies and some salt and pepper. After your veggies look like they are getting golden brown and crispy, add about a teaspoon to teaspoon and a half of curry powder. I just eyeball it to make sure all the veggies are covered. When the veggies are tender to a fork they are done. You can serve this with anything it would be great with chicken, pork, steak, probably even some seafood. The point is do whatever you like to this recipe to make it your own.
Oh I almost forgot I added mushrooms to ours too, if you dont like mushrooms by all means leave it out or replace it with something you do like.

A very spicy idea

Hello everyone, I hope you all had a joyous weekend and a safe one at that. A few months back one of the people I watch on youtube was talking about where she gets her spices. There is her link for anyone who would like to check her out. I went to the place she ordered her spices its I am sharing this with you because I just bought some curry powder there and I am very pleased with the product along with the price. You can buy in bulk if you are going to gift them out or just get the reg. sizes and that is what I did. Just for some perspective on how affordable the spice barn is , hannaford carries a brand of curry powder going for 6.99 for 1.75 ounces. When I went to the spice barn's website I was able to buy 3.34 ounces of curry powder for 4.69 after tax was added. On the website they have a lot of spices to choose from they even have spices you can add to popcorn (my favorite snack). I have no recipe today, but stay tuned and I will have one tomorrow. I just loved that website so much I wanted to share it with you all. Also check out Noreen on youtube. She has fantastic recipe ideas and ideas on growing your garden too. Here is a link to her videos she is definately worth watching.

Hello everyone. I have no recipe tonight for you. We spent a few hours at the lake today so we just had leftovers for dinner. I am taking the weekend off since we have a some family functions to attend and probably spending some time at the lake swimming and fishing. However I will be back on here Monday. Hello everyone, thank you all so much for stopping by and reading my posts. It means a lot to me. I don't consider myself an expert I just love cooking for my family. I hope that maybe we all can help each other and share ideas. Sorry this blog is coming so late, I had a blond moment and couldn't sign in for hours just to find out that I left out one letter in my email address that I have had for years by the way lol. So for tonight's blog I figured I will tell you how I make my garlic cheesy bread. I start off with an Italian bread or french bread will do whatever is on sale or if you make your own that will work here too. I make a garlic mayonnaise with the yolk of two large eggs and extra virgin olive oil and minced garlic. In your blender you take your yolks and garlic and slowly add your extra virgin olive oil aprox. a half cup. On a high setting on your blender slowly add your oil until it becomes the consistency of mayo. Slice your bread of your choosing in half and brush both pieces of bread with your mayo. From there you can add whatever cheeses you like. Along with some oregano. I like using a mixture of Parmesan and cheddar. You set your oven to about 375 (depending on your oven). And bake until the bread is golden brown and the cheeses are melted. I know this isn't a heart healthy recipe but in moderation you can fit this into your menu without busting your waistline. Hello everyone. I am sorry this blog is coming up late in the day. We took our kids to the beach and have been gone most of the day. At any rate better late than never. Today I thought it would be a great idea to use up the chicken from last night's chicken spaghetti. There are many options you can make with the chicken. You can make sandwiches with your left over cheesy garlic bread with romaine hearts and tomatoes or a salad or even wraps. Tonight for dinner I thought its best to keep it simple. So I decided to make a dinner salad. You will need a package of mixed greens, romaine hearts, celery, cherry tomatoes, banana peppers (ours is fresh out of the garden) and cucumber slices. All you do is heat up your chicken just until its warm not hot so the flavors will mix with the salad. Add your mixed greens and romaine hearts in a bowl and then add your chopped celery, banana peppers and cucumber slices. Top it with the chicken and your favorite dressing. I dont add any dressing because the chicken is cooked with the 4 seasons italian dressing anyway. I might sliver some red peppers over the top for color and add a dash of red wine vinegar and its ready to eat. You of course can change out or add any veggie from this as you want to. This isnt your traditional Spaghetti

Hello everyone , thank you for stopping by. Feel free to leave comments, suggestions or concerns. Today I have a recipe for you all that is quick and easy to make. Not too many bells and whistles with it either and great for a summer time meal. I call this chicken spaghetti. We start out with 4 boneless skinless chicken breasts. Cut them into bite sized pieces and then season with salt and pepper. From there heat up a large pan with a tablespoon of extra virgin olive oil and just a sliver of butter. Add your chicken breast to the pan. While that is browning, start boiling your water for your spaghetti. Make as much or as little as you need here, I usually make about a quarter of a pound to feed 4 people, maybe a little less. After your chicken is browned you will need to add the following: 1 envelope of four seasons italian dressing (dry), and a quarter cup of white vinigar. Let the chicken mixture reduce. Optional at this point is adding a package of frozen broccoli. If you dont like broccoli you can substitute it for any other veggie or leave it out completely. From here you will need fresh parmesan cheese the stuff in the can will not do it. I know its rather expensive but if you keep a small triangle of it in your freezer it lasts longer and a little bit of this heavenly goodness goes a long way. Shut off the heat to your chicken (after it has reduced) and grate the cheese over the top. Drain your spaghetti and add your chicken and italian dressing mixture to the spaghetti and your done. For a side you can either make a mixed green salad or cheesy garlic bread. I will give you recipes for those at another time.
I know times are hard for some people today but if we take the time to live,laugh and love its quite possible to get through anything life throws at us.

Hi everyone, so last night we had a ton of leftovers that needed to used. We had leftover pork chops, potatoes and some summer squash picked fresh from our garden, that also needed to be cooked. I came up with a concoction of a Chinese hash. I diced up my tators and browned them in a teaspoon of extra virgin olive oil and a half teaspoon of butter. You add a small amount of butter to keep the extra virgin olive oil from burning. Then you take the potatoes off the heat and let drain on a paper towel. Next you add in your veggies I used what I had on hand frozen veggie stir fry with sugar snap peas and diced summer squash and a jumbo clove of garlic. If you dont have the jumbo garlic not to worry , just use two cloves of fresh garlic or garlic powder. The trick here is just use what you have on hand. After I added the veggies I cut the pork chops off the bone and diced the meat and then added it to the veggies and then added the potatoes. For seasonings I added three teaspoons of soy sauce and three teaspoons of teriyaki sauce (season to your own taste). From there I added two pinches of brown sugar to even out the salt from the sauces and about 1 third cup of water. cooked until the veggies were no longer frozen and served it up. My whole family loved it. I was going to use rice but we were out of rice so the potatoes interestingly enough worked. It doesn't look very how shall we say "pretty", lol but it tastes great. Be sure when you drain the tators that you dont take the oils out of the pan. Try if you can to use a slotted spoon to get the tators out. Otherwise you will have to re add the extra virgin olive oil and butter. I hope you all enjoy and dont forget to live, laugh and love.

Misc. MishMawsh

Hello out there. Thank you so much for checking out my first blog. I am very new to this as in I have never done this before. So if there is some advice or constructive criticism out there don't be shy. Hopefully we can learn from each other. This blog is going to be about cooking mainly but more than that. Its going to be a little bit of this and a little bit of that. If there are any requests or suggestions I will welcome them.

A little bit about me I am 34 married with two beautiful little girls 3 and 7. I have very little time to devote to cooking as you can imagine. I try at least once a week to cook like crazy so that way it lasts us through the week with leftovers. I have simple tricks and tips to revamp leftovers too. I dont know if you are a lot like me but I am not a fan of leftovers, so to save a dollar or two I have to make it interesting, for myself and of course my family.
